Slow cooking Thursday

It had been a very long time since I joined Sandra in with this. It was summer and days were different. Anywho, I really am not making most of my crock-pot meal on Thursday but Tuesdays-they are my crazy days- since I have a ton of stuff to do on that day. So, I hope that it is ok that I still participate and if not "allowed" to then I won't. Anywho, on to my crock-pot meal for the week.

* Not sure where I got this but man is it good! The only thing is next time I will double it! It was THAT good! My kids loved it and well that is sometimes half the battle! Also, I didn't have any ginger in the house but it still tasted awesome!


Crockpot Peking Pork Chops Recipe
Serve this Crockpot Peking Pork Chops recipe over rice.


What You Need• 6 pork chops (1/2 to 3/4 inch thick)-I used the boneless thin ones.

• 1/4 cup brown sugar

• 1 teaspoon ground ginger

• 1/2 cup soy sauce

• 1/4 cup ketchup

• 1 clove garlic, mashed(I used the kind that is in the fridge-lazy here to do it myself)

• Salt to taste

• Pepper to taste

What To Do

1. Trim excess fat from pork chops place intp crockpot.
2. In a small bowl, mix remaining ingredients, then add to crockpot.
3. Cover; cook on low 4-6 hours, or until tender.

INGREDIENTS
1 slow-cooker liner (we used Reynolds)
2 lb cubed beef stew meat
1⁄2 cup teriyaki sauce (we used Kikkoman Takumi Collection)
1⁄2 cup orange marmalade( I used a little more since I wouldn't have enough for another reicipe)
1 tsp each minced garlic and fresh ginger(I didn't add the ginger-I thought I had some and nope didn't!)
1 red pepper, cut in 1⁄2-in.-thick strips
6 oz snow peas, strings removed
4 scallions, thinly sliced

PREPARATION
1. Line a 3-qt or larger slow-cooker with liner. Add beef, teriyaki sauce, orange marmalade, garlic and ginger to slow-cooker. Cover and cook on low 8 to 10 hours until beef is tender.
2. Turn to high. Stir in pepper strips and snow peas; cover and cook on high 10 minutes until vegetables are crisp-tender. Top with scallions.

I am going to serve it with rice-it smells soooooooooooooo good! :)

Slow-cooking Thursday

It is time for Slow-cooking with Sandra!

* I made this today and I have to say it is very tasty! My only beef(hahahaha!) was that it only took about 4.5 hours in my crock-pot. So, whats a girl to do-I ate one for lunch and put the rest in the fridge to be heated up later. lol :)
I will also say that I added a slice of cheese to it and I think that was a bit much. So, next time I will just use everything else but more cheese(and I love cheese to)!


Simple Cheeseburger Sandwiches
1 1/2 lb of lean ground beef
1 clove of garlic, pressed
1/2 tsp ground black pepper
1/4 tsp salt
8 oz of velvetta cheese (grated or cubed)
2 tbsp of milk
1 small onion, chopped
2 garlic cloves, pressed

Brown ground beef with 1 clove of garlic, black pepper, and salt. Add a bit of water, if you need to the meat while cooking it. Cook until no longer pink. Pour into the crock pot and add cheese, milk, onion and 2 more garlic cloves. Cook on low for 6 to 7 hours. Serve on buns with condiments of choice. (mustard, ketchup, mayo, pickles, tomatoes, and sliced onions).

Slow cooking Thursday

Oops I almost forgot it was Thursday-I have been out grocery shopping and running errands.
Tonight we are having an easy crock-pot meal.

Meatball Hoagies
I just cheat and use frozen meatballs-I get the cocktail size they are smaller
A jar of my favorite spaghetti sauce
Put in crock-pot on low.
Good hoagie rolls
provolone cheese and parm cheese.
Eat & enjoy!!

Slow Cooking Thursday-UPDATED on how it tasted!


Chicken Parmesan CrockPot Recipe


The verdict:
the only complaint was not enough sauce for the family's liking but that is an easy fix-next time I will add more. :) But other than it was Yummy!!!!!!!!!!!! Will make it again!


The Ingredients:
--2-4 boneless, skinless chicken breast halves
* I used 6 for our family & I used more in the dry ingredients. :)
--1/2 cup bread crumbs
--1/4 cup parmesan cheese
--1/2 t Italian Seasoning
--1/4 t black pepper
--1/4 t kosher salt
--1 T olive oil
--1 beaten egg
--sliced mozzarella cheese
--favorite jarred marinara sauce


--spread the 1 T of olive oil into the bottom of your crockpot stoneware insert
--whip the egg with a fork in a separate bowl
--mix the bread crumbs with the seasonings and the parmesan cheese in another separate dish
--dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings
--place the chicken breast pieces in the bottom of the crock
--layer 2-3 slices of mozzarella cheese on top
--cover with entire jar of marinara sauce
--close lid and cook on low for 6-7 hours or high for 3-4. If your chicken is still frozen, it will take longer.
Serve with your favorite pasta. I will be serving it with Angel hair pasta

Can't wait to try this-it smells so good!

Slow Cooking Thursday

Seriously I need to copy the recipes with the names of who posted them. I am again making a dinner from someone I read during this. I apologize and will try to do better.




Crock-pot BBQ Country -Style Pork Ribs

4.5 lbs Country-style pork ribs

1 onion sliced

3 cloves garlic, minced

1/3 cup of apple jelly

2/3 cup of bbq sauce


Spray a 4-6 quart crock-pot with cooking spray. Place ribs, onion and garlic inside-cover and cook on LOW for 8-10 hours.


Once cooking time has elapsed drain juices & discard onion & garlic. Place ribs back into crock-pot.


In small bowl combine apple jelly & bbq sauce. Brush mixture over ribs coating well.


Place cover back in crock-pot and cook on High for about 30 minutes or until sauce has made a glaze over the meat.

Slow cooker Thursday

I know I got this recipe off Sandra's blog & I thought I wrote the name down but I didn't! Sorry-if this is yours PLEASE let me know!

Slow-Cooker Orange Chicken
8 small boneless chicken thighs(approx. 1 lb) I used 5 boneless chix breast since that is what my family likes.
3 TBSP of flour
1/3 cup of Orange marmalade*
1/3 cup original bbq sauce*
* I added a little more since my chicken is a little bigger.
2 TBSP soy sauce
1 TBSP grated fresh ginger root(I left this out since I didn't have any and wasn't going to the store.)

Toss chicken with flour in slow cooker. Stir in all remaining ingredients; cover with lid. Cook on low for 6-8 hours)or high for 3-4)

Weight Watchers Chili Mac Pot Recipe

16 ounces extra lean ground turkey or beef

1 cup chopped onion

2 cups (one 16 ounce can) tomatoes, coarsely chopped and un-drained

1 (10 3/4 ounce) can Healthy Request Tomato Soup

1 cup reduced-sodium tomato juice (I just used the whole can)

2 teaspoons chili seasoning

6 ounces (one 8 ounce can) red kidney beans, rinsed and drained

1 cup elbow macaroni

In a large skillet sprayed with olive oil flavored cooking spray, brown meat. Meanwhile, in a slow cooker container sprayed with cooking spray, combine onion, un-drained tomatoes, tomato soup, tomato juice, and chili seasoning. Stir in kidney beans and uncooked macaroni. Add browned meat. Mix well to combine. Cover and cook on LOW for 6 to 8 hours. Mix well before serving. Serves 6 (1 full cup) 4 points

Slow Cooking Thursday



This is my first time participating in this-so hopefully I am doing this right.

Crockpot Italian Chicken

4 Whole Boneless Skinless Chicken Breast Halves( I used 5 since there are 5 eating here.)

16 ounces can of Tomatoes -- (or 2-3 fresh tomatoes) (I used petite canned ones)

1 Whole onion -- sliced (I only used half since the kids don't like onion)

1 Teaspoon Italian seasoning (This I did not measure-I just put in what I thought I would like)

1 Whole Green Bell Pepper -- seeded and chopped (I sliced mine like the onion, I used my pampered chef Mandoline)

Salt And Pepper -- to taste Throw it all in the crock pot and cook on low 8-10 hours.

We haven't ate yet since I am still waiting for kids but I did take a little taste and yummmmmmmmmy!!! I am going to serve mashed potatoes with it.
