Happy Homemaker Monday
Sandra at Diary of a Stay at Home Mom host this meme and it has been a long time since I participated and today I thought what the heck.

Things that make me happy:
Having the day off! I like my little part-time job but knowing why I am off just makes me happy. The lady I work for has family in town. :)

Having a short week and 2011-lots of new things coming our way and starting back with Beth Moore and the others memorizing scripture.
Tips and Tricks:
Color code your calendar. I do it and have so for years and it really works. I highly recommend it to everyone even those with young children who can't read but can know their color.

Happy Homemaker Monday

Actually I have read it once & now I am reading it a second time so I can highlight some parts of it! The author Joanne has a Blog that I read daily and she asked for people to read it and I said I would-never thinking I would get a copy and I had and well I love the book and plan on doing a review as soon as I am done with it again.

Happy Homemake Monday

On my bedside table:
Two Bible, devotional book, Praying for my husband cards and " Misplacing God"
On my TV: Nothing-I am caught up! :)
On the menu for tonight: We had bbq chicken kabobs with green, red & orange peppers and pineapple and corn on the cob. Yummmy!!
On my To Do List: Finish my Bible study for tomorrow. The house is done!
New Recipe I tried last week: Meatless Crock-pot Enchiladas
Meatless Crockpot Enchiladas

This rich and delicious recipe cooks in your crockpot so it's easy; and the depth of flavor comes from ingredients like tortillas, condensed soup, and enchilada sauce.
Prep Time: 25 minutes
Cook Time: 5 hours,
Ingredients:
1 Tbsp. olive oil
1 onion, chopped
3 garlic cloves, minced
2 cups frozen ground beef substitute crumbles
10 oz. can condensed cream of mushroom soup with roasted garlic
4 oz. can chopped green chilies, undrained
10 oz. can enchilada sauce
10 (6") corn tortillas
3 cups shredded Cojack cheese
Preparation:In large skillet, heat olive oil and saute onion and garlic until tender. Add beef substitute crumbles, soup and chilies. Simmer, stirring frequently, for 4 minutes.
Spray 3-4 quart crockpot with nonstick cooking spray. Layer ingredients: first, 1/4 cup enchilada sauce, then 4 corn tortillas (overlapping and tearing in half as needed for an even layer), 1/3 of 'beef" mixture, 1/4 cup enchilada sauce and 1 cup cheese. Repeat layering twice, using 3 corn tortillas and half of remaining 'beef' mixture, enchilada sauce and cheese in each layer. Cover crockpot and cook on low for 4-1/2 to 5-1/2 hours. Let stand 5 minutes before serving. 6 servings
* The only thing I would say is watch it at the 4. 5 hour-I let mine cook a little longer and it was a little to soft. And I think I will use flour tortillas instead-not a big fan of the corn ones and I would use 2 cans of the enchilada sauce.

That leaving the children home was a good thing. Good for them to see what it takes to run a house and good for us to just be us!

In the craft basket: Nothing. :( I want to learn how to crochet but I am a visual learner and seeing it online not very helpful.
Looking forward to: My trip with Lonnie. Five days in Hawaii!
